Eat. Too often, do we feel guilty about our food choices. Without getting too psycho-analytical as to why this is so, let’s focus in on our own marketing strategy for yummy eats.

Food is good for you. Food is essential for your heightened mood, your enriched body, your convicted mind, and your uplifted spirit.


Listen to your body.


During the cold winter months, our minds and bodies want warm, savory, rich, comforting food. This lunch meal is super quick, easy, satiating, gluten-free and nutrient-dense. It can be served either warm or cold. I prefer mine warmed in the oven for 10-12 minutes to crisp up both the falafel and tortilla and to melt my cheese, making it satisfyingly buttery and smooth.

The main ingredients are falafel and your choice of tortilla. Feel free to dress this dish as you like! I’ve been wanting to utilize different types of sprouts into my meals, so I was inspired to treat my health with this creation when I passed broccoli sprouts at my last grocery shopping trip. In comparison to mature broccoli, research has shown that broccoli sprouts provide an increased bioavailability to minerals and vitamins (1). As both a woman in her mid-30’s and of Filipino heritage, these bones appreciate the extra calcium!

I could not have eaten this fast enough! I ate 2, but I could have easily added a third! I know most people post-holiday want to adopt diets and restrict their eating, and consume ONLY ‘healthy’ foods. That mindset can work. Temporarily (2).

The more open you are to food, enabling yourself to enjoy food, and feel good and happy about your choices–the less you will experience the feelings of failure, self loathing, and anxiety with food restrictions.

This post-holiday season, let’s leave the dieting behind and own a life that is dedicated to discovering foods that we love, enjoy, and that nourish our wellbeing. There is so much yummy goodness out there to try! The possibilities are truly, endless.

I have experienced that the key to adopting, living, and thriving in a healthy lifestyle is the attitude I take. In a healthy lifestyle, you are adding to your life, not taking away. Live your life, B! And get that yummy, feel-good grub on! If it makes you feel healthy and strong? Do it. If it makes you feel slow, tired, foggy, guilty, and regretful? Be kind to yourself, mama. There is a different way to live. And you have the power to choose that life. It’s time to eat and fuel your body with energy and strength!

 

Ingredients:

~15 minutes to prepare

  1. Cassava & Coconut Tortillas
  2. 3-4 Falafels per tortilla (I found mine pre-made at Whole Foods)
  3. Halloumi cheese, cut into thin slices (I used sheep milk halloumi, also found at Whole Foods)
  4. Broccoli sprouts
  5. Mayonnaise and Sriracha (I’ve used Vegenaise with hot buffalo wing sauce in other versions)
  6. Blueberries and/or carrots as a side

Instructions: Place the tortillas either flat on a lined cookie sheet; or in a taco shell grilling/oven rack. Lay 3-4 falafels onto the tortilla and layer the sliced cheese on top. Place into oven and heat for 10-12 minutes at 300 degrees fahrenheit. While it’s warming, pick out your sides and prepare your sprouts by taking out your desired amount and slicing the ends, if needed. Once heated up, take out your falafel cheese tortillas and dress them with your sprouts, other desired vegetables, mayonnaise, and Sriracha.
